You can also use the whipper to create a delicate mousse, a frothy sauce like a light hollandaise or frothy tomato sauce – the texture can be wonderfully refined in the whipper, so that the sauces are particularly airy yet still have an intense flavour.

    Recipes made with a whipper, such as the Kisag Whipper Professional, are guaranteed to leave a lasting impression on your guests. The whipper is a simple yet sophisticated device. It consists of a container, a nozzle and a cap, into which a gas cartridge is inserted. N2O (laughing gas) is used to create a creamy and light texture. The way the whipper works is simple but effective. When the whipper is filled with a gas cartridge, the gas is released into the container and mixed into the liquid. This causes the liquid to foam and gives it a fine-pored texture. This gives cream a fluffy, airy consistency. But it's not just liquids like cream that can be processed in the Whipper – sauces, desserts and even cocktails can be refined in this way.
