Preparation

Stir all ingredients until the sugar has completely dissolved.

Pass the mixture through a funnel and sieve into a 0.5 L whipper (e.g., CREATIVE or PROFESSIONAL), charge with one charger, and shake vigorously approximately 8 times. Afterwards, keep the whipper in the refrigerator for at least 6 hours.

Thanks to the mascarpone and the aromas of cinnamon and rum, this apple cream is a highly versatile dessert element. The light, airy structure from the Kisag whipper gives it an elegant touch despite the rich ingredients.

Best uses:

Classic Dessert Combinations
- Hot berries:
A wonderful contrast between the cold, creamy "apple cloud" and warm stewed plums, cinnamon cherries, or wild berries.
- Warm apple strudel or crumble: Instead of classic whipped cream or vanilla sauce, this cream serves as the perfect crowning topping.
- Chocolate cake: The freshness of the apple purée and the acidity of the lemon juice provide a great counterpoint to a heavy chocolate fondant or brownies.

As a Layered Dessert (Verrine)
- Crunch factor:
Layer the cream in a glass, alternating with crushed amaretti, speculoos biscuits, or caramelized walnuts.
- Autumn Trifle: Combine it with a layer of vanilla pudding or yogurt and fresh apple slices.

With Pastries & Breakfast

- Waffles & Crêpes:
A generous dollop of apple cream on freshly baked waffles is a luxurious upgrade from standard apple sauce.
- Kaiserschmarrn: In Switzerland and Austria, the combination of apple and rum with Kaiserschmarrn is an absolute classic – this cream is the modern, airy version of it.

Food Pairing Tips

- Cheese platter:
Surprisingly, this cream pairs excellently with strong cheeses like Gorgonzola or ripe Camembert. The sweetness and rum harmonize perfectly with blue cheese.
- Drinks: Serve with a sweet dessert wine (Sauternes), a hot chai latte, or – matching the recipe – a high-quality aged rum.

Serving Tip

Since the cream stays fresh in the whipper for several days, it’s also a wonderful upgrade for afternoon coffee: simply dispense it directly onto a slice of simple sponge cake (e.g., marble cake).
