For the cherry-espuma
350 g morello cherries from a jar
150 ml heavy cream

Strain the cherries, collect the liquid and set aside.
Purée the cherries well with a hand blender or stand mixer, add the cream and pass the entire mixture through a funnel and sieve into a 0.5 litre whipper.
Pressurise the whipper with a whipper capsule and shake approx. 8-10 times. Done.
The cherry espuma is ideal as a filling for crêpes, as a topping on vanilla ice cream or simply served on its own in a glass, decorated with fresh cherries.
