Preparation

Roast the carrots in the oven at 200 °C (conventional heat) for about 25 minuten, then season to taste with a little olive oil and salt. 

Finely puree all ingredients, including the roasted carrots, using a hand blender or a stand mixer. If the mixture is a bit too thick, simply add a little water until the desired creaminess is reached.

Gently heat all ingredients and finely puree them using a hand blender or a stand mixer.

Pass the mixture through a funnel and a sieve into a 0.5-liter whipper, pressurize it with a whipper cartridge, and shake vigorously about ten to twelve times

Pickled olives, capers, artichoke hearts, or pickled cucumbers provide a tangy contrast to the delicate sweetness of the carrot. To highlight the ginger flavor, pair the dip with spicy feta or mild fresh goat cheese. Round out the appetizer platter with toasted pine nuts, walnuts, or salted pistachios, sprinkled directly over the hummus for the perfect crunch.

As a side dish to main courses
This hummus pairs wonderfully with classic pan-seared or grilled meats, such as grilled chicken breast, lamb chops, or kofta meatballs seasoned with Middle Eastern spices. For a vegetarian or vegan version, it pairs perfectly with grilled halloumi or pan-fried tofu, or serves as a flavorful base for a varied Buddha bowl with quinoa, avocado, and spinach. This hummus makes an excellent elegant starter for a spring or summer menu. To serve, simply divide the hummus into small glasses and top with the espuma. A few leaves of cilantro or mint, along with a pinch of black cumin, provide the perfect visual and flavorful finish.
