Preparation
Cut the broccoli into small florets. Peel the carrots, cut them in half, and use a vegetable peeler to cut them into thin strips (julienne). Slice the spring onions into small rings.
Add the wok oil to a large pan or wok and briefly sauté the spring onions. Then, add the carrots and broccoli.
Deglaze with water and coconut milk, then carefully stir in the soy sauce, maple syrup, and peanut butter. Cover and let it simmer over low heat for about 4–5 minutes.
Finally, add the udon noodles and chili sauce, stir well, and continue to simmer covered for another 2–3 minutes on low heat.
If you like, season to taste with more chili and soy sauce. To serve, garnish the dish with finely sliced spring onions, sesame seeds, and a drizzle of chili oil.
These creamy peanut udon noodles are a true all-rounder. Since the dish is very rich due to the peanut butter and coconut milk, high-protein sides or refreshing contrasts pair exceptionally well.
Here are some recommendations to perfectly complement the dish:
The Extra Portion of Protein
For those who want to enhance their meal with an extra boost of protein, there are wonderful options. Crispy fried tofu, cut into small cubes, harmonizes particularly well and offers a great texture to the creamy sauce. If you prefer something more refined, go for king prawns briefly tossed in garlic and ginger to top it all off. For that classic Asian feeling, savory satay-style chicken skewers from the grill or pan are the ideal choice, as they perfectly highlight the peanut theme of the recipe.
Side Dishes
To round off the meal perfectly, fresh side dishes provide the necessary contrast to the creamy sauce. An Asian cucumber salad made of thin slices, rice vinegar, sesame oil, and a touch of sugar brings just the right acidity to ideally balance the richness of the peanut sauce. Edamame sprinkled with sea salt makes an excellent healthy snack, while spicy-sour kimchi with its fermented note provides an exciting texture and additional depth.
Drink Pairings
A homemade ginger-lemon iced tea, with its fine spice and tangy freshness, provides the perfect Asian vibe, while a cold, light lager or pilsner acts as the classic, refreshing counterpart to the savory peanut flavors. If you prefer something warm, choose a delicate jasmine tea, whose subtle floral notes round off the meal elegantly.
