Preparation

Cut the broccoli into small florets. Peel the carrots, cut them in half, and use a vegetable peeler to cut them into thin strips (julienne). Slice the spring onions into small rings.

Add the wok oil to a large pan or wok and briefly sauté the spring onions. Then, add the carrots and broccoli.

Deglaze with water and coconut milk, then carefully stir in the soy sauce, maple syrup, and peanut butter. Cover and let it simmer over low heat for about 4–5 minutes.

Finally, add the udon noodles and chili sauce, stir well, and continue to simmer covered for another 2–3 minutes on low heat.

If you like, season to taste with more chili and soy sauce. To serve, garnish the dish with finely sliced spring onions, sesame seeds, and a drizzle of chili oil.
