Preparation

Stir the agar-agar into the cold vegetable broth and bring to a boil. Finely puree all ingredients using a blender or a hand blender.


Strain the mixture through a funnel and sieve directly into a 0.5 L Whipper (e.g., Whipper Professional 0.5L). Charge the Whipper with one Whipper charger and shake vigorously 14 times.

Place the Whipper in the refrigerator for several hours and shake vigorously a few more times before serving.
