Preparation

Blend the milk, oil, salt, and Gorgonzola in a stand mixer until smooth, then strain the mixture through a funnel and sieve into a 0.5 L whipper.

Add the cream, charge the whipper with one cream cartridge, and shake vigorously about 10 times.

Chill the whipper in the refrigerator for about 1–2 hours. Then arrange sliced vegetables (as sticks) on a serving plate and serve the mousse in a small dip bowl alongside the vegetable sticks.
