Preparation
Combine all ingredients up to and including the lime juice.
Add the heavy cream and mix everything thoroughly once more.
Strain the mixture through a funnel and sieve into a 0.5-liter Whipper (e.g., Professional or CREATIVE). Charge the Whipper with one cartridge to pressurize it and shake vigorously about 6–8 times.
Thanks to its creamy base (cream cheese/heavy cream) and the fermented heat of the Gochujang paste, this dip is incredibly versatile. Here are the best ways to serve it:
Classic Pairings
The dip pairs perfectly with vegetable sticks such as crunchy bell peppers, carrots, cucumbers, radishes, or celery. The freshness of the vegetables provides a great contrast to the spicy cream. It’s also excellent with breadsticks (grissini), tortilla chips, rice cakes, or freshly toasted flatbread/naan.
Korean-Inspired Pairings
Since Gochujang has a Korean base, this dip goes very well with Fried Chicken or Cauliflower Wings. It is also a great match for Gyoza, Mandu, Kimbap, or Sushi – a dollop on top adds a delicious creamy heat.
Modern Appetizer Ideas
The dip is also fantastic with sweet potato fries, as a burger topping, or as a side for grilled shrimp skewers. If you like, you can also serve it with roasted cauliflower or broccoli.
Creative Ways to Use Leftovers
If you have any leftovers, they work perfectly as a bowl topping (for Poke or Buddha bowls) or as a sandwich spread. This dip is an excellent replacement for mayonnaise on a steak sandwich or an avocado bagel.
