  • circle icon250 g QimiQ sauce base
  • circle icon30 g onion, finely diced
  • circle icon10 ml lemon juice
  • circle icon100 g smoked salmon
  • circle icon20 g butter
  • circle icon50 ml cream (at least 32% fat)

Preparation

Finely dice the onion and sauté lightly in butter until translucent.

Add the QimiQ sauce base, stock, cream, and diced smoked salmon, then bring briefly to a boil. Season well with pepper, salt, and lemon juice to taste.

Blend the mixture finely in a stand mixer, then strain it through a Kisag funnel and sieve directly into a 0.5 L Whipper (e.g. Professional). Charge the Whipper with one cartridge and shake vigorously about 16–18 times.
