
CREAMY SMOKED SALMON SAUCE

For the smoked salmon cream sauce1 pinch salt from the mill
1 pinch pepper from the mill
170 ml vegetable or fish stock
250 g QimiQ sauce base
30 g onion, finely diced
10 ml lemon juice
100 g smoked salmon
20 g butter
50 ml cream (at least 32% fat)

Finely dice the onion and sauté lightly in butter until translucent.
Add the QimiQ sauce base, stock, cream, and diced smoked salmon, then bring briefly to a boil. Season well with pepper, salt, and lemon juice to taste.
Blend the mixture finely in a stand mixer, then strain it through a Kisag funnel and sieve directly into a 0.5 L Whipper (e.g. Professional). Charge the Whipper with one cartridge and shake vigorously about 16–18 times.
