For the whipped quark foam75 g mixed nuts and seeds
100 ml heavy cream (at least 32% fat)
0.5 piece vanilla bean
3 piece apple
40 ml agave syrup
100 ml milk
1 organic lemon
30 ml maple syrup
3 pinch salt
1 tablespoon honey
150 g quark (also known as Topfen / soft curd cheese)
1 tablespoon butter

Preparation
Stir together the cream, milk, agave syrup, and quark. Season with the juice of half a lemon and a pinch of salt.
Pass the mixture through a funnel and fine sieve into a 0.5 L whipper. Charge with one cream cartridge and shake vigorously about 8–10 times. Then refrigerate the whipper for 1–2 hours.
Set aside a few of the nuts and seeds. Mix the remaining nuts and seeds with 1 tsp agave syrup, honey, and a pinch of salt, then spread the mixture onto a baking sheet lined with parchment paper.
Roast at 190°C for 8–10 minutes until golden brown.
Peel and core the apples, then cut them into thick wedges. Caramelize the maple syrup in a pan, then add the apple wedges and butter.
Season with the remaining lemon juice and zest, vanilla, and salt. Then let the apples simmer over low heat for 3–5 minutes until tender.
