1 spring onion
50 g cheese (gruyère)

Cut the watermelon into thin, elegant slices using a vegetable peeler and arrange them on a plate like a fancy carpaccio.
Cut the spring onions into thin strips and top the watermelon carpaccio with them.
Grate some freshly grated cheese over the top, garnish with a sprinkling of olive herb and finally drizzle a little rapeseed oil over the top.
