Preparation
Fill Kaffir lime leaves, fresh ginger, vodka, and lemongrass into a 0.5-liter whipper (e.g., Professional 0.5L). Attach the Rapid Infusion set to the whipper according to the instructions.
Pressurize the whipper with one whipper charger, shake vigorously a few times, and let it rest for 5 minutes. Then, quickly vent the whipper by pressing the lever.
Unscrew the head of the Whipper Professional and let the flavored liquid rest again for a short moment.
Mix the vanilla syrup, milk, and Pro Espuma together, then strain through a funnel and a sieve into a 0.5-liter whipper (e.g., Professional). Pressurize the whipper with one charger and shake vigorously a few times.
Place 5 cl of the Rapid Infused Vodka into a shaker along with the sugar syrup, passion fruit pulp, lime juice, and ice, and shake vigorously.
Pour the cocktail into a cocktail glass, top with vanilla espuma, and garnish with half a passion fruit.
The Star Martini is a highly complex, modern cocktail thanks to its combination of exotic flavours (passion fruit, lemongrass, kaffir lime), spicy heat (ginger) and a creamy, sweet vanilla note. Here are the best ways to serve this cocktail:
As an aperitif or to accompany Asian-inspired cuisine
The finely balanced aromatic notes of kaffir lime, lemongrass and ginger harmonise wonderfully with a wide variety of flavours. The drink really comes into its own with sashimi or ceviche, as its refreshing acidity and the slight heat of the ginger pair perfectly with the raw fish. It also makes a harmonious accompaniment to light Thai dishes such as summer rolls or prawn skewers with a spicy chilli dip. Last but not least, the subtle floral vanilla note provides an exciting flavour contrast to savoury, steamed dim sum, making it a versatile choice for a sophisticated culinary menu.
As an elegant dessert cocktail
Furthermore, thanks to its seductive vanilla espuma, the Star Martini makes for an elegant dessert cocktail that is almost perceived as a liquid dessert. It is therefore an excellent choice for rounding off a multi-course menu in a light and stylish manner, rather than serving a heavy dessert. The cocktail pairs particularly well with fruity creations such as refreshing sorbet variations of mango or coconut, as well as a delicate coconut panna cotta, whose subtle flavours are wonderfully enhanced by the floral notes of the espuma.
For upmarket occasions and summer events
Thanks to its special preparation using rapid infusion and the finishing touch of the espuma, the Star Martini also becomes a real highlight at upmarket occasions and summer events. It serves as a charismatic ‘show drink’, delighting guests at cocktail receptions with its professional and visually appealing presentation. Especially on warm summer evenings on the terrace, the combination of passion fruit and the invigorating herbal citrus notes unfolds its full refreshing effect, making it the ideal choice for stylish outdoor gatherings.
Food pairing
The combination with fried dishes, such as crispy spring rolls or tempura, proves particularly appealing: the cocktail’s acidity skilfully cuts through the richness of the food, whilst the delicate texture of the vanilla espuma creates a harmonious balance. The drink also makes a surprisingly harmonious accompaniment to dark chocolate mousse, as the cocktail’s pronounced vanilla notes perfectly highlight the aromatic depth of the chocolate – particularly when subtly enhanced with a pinch of sea salt.
