Preparation

Set the chocolate aside. Place the remaining ingredients, except for the cream, in a blender and blend until smooth. Allow the mixture to rest and thicken slightly.

Stir in the cream, then pass the mixture through a funnel and sieve into a 0.5 l whipper (e.g., Whipper CREATIVE or PROFESSIONAL). Charge with one charger, then shake vigorously about 10–12 times. Place the whipper in the refrigerator and chill for approximately 1–2 hours.

Melt the couverture in the microwave or over a bain-marie (water bath) and stir until smooth. Then, spread it thinly onto parchment paper and allow it to cool.
