Preparation

Press the potatoes. Peel and dice the onion and garlic, then sauté them lightly in butter until translucent. Deglaze with white wine and reduce. Add the milk and stock, then bring to a boil.

Add the remaining ingredients and simmer gently for five minutes. Season to taste with pepper, nutmeg, and salt.

Strain the soup through a Kisag funnel and sieve into a 0.5 L Whipper (e.g. Professional or Thermo). Charge the Whipper with one cartridge and shake vigorously about 8–10 times.
