For the plums750 g frozen pitted plums
3 tablespoon sugar
150 ml red wine
50 ml port wine
1 cinnamon stick
1 vanilla bean, halved

4 cloves

200 g sour cream
150 g cream
100 g yogurt

Preparation
For the plums, place all ingredients up to and including the vanilla in a small pot and let everything simmer for about 20 minutes.
Remove the vanilla bean and the cinnamon stick, then season with a little lemon juice. The plums can be left whole or blended, depending on your preference.
For the foam, place all ingredients up to and including the vanilla in a small pot, heat everything, and then let it cool down again.
Mix all the ingredients for the foam and strain the mixture through a fine sieve into a 0.5-liter whipper. Charge it with one whipper cartridge and shake the whipper about eight times.
For the crumble, mix all the crumble ingredients, spread the mixture on a baking sheet lined with parchment paper, and bake it in a preheated oven at 180 °C for about 8 minutes.
