For the honey-lime espuma1 lime
200 ml double cream
100 ml milk
1 tablespoon honey

Cut the lime in half and squeeze out the juice.
Pour the milk, cream, and honey into a bowl (make sure to use high-quality honey – the more aromatic, the better), mix with the lime juice, and strain through a fine sieve into the whipper.
Close the whipper tightly, charge it with one cream charger, and shake it vigorously about 12–14 times.
Start by adding some cookie crumbles to a glass, drizzle a few drops of lime juice over them, and add a bit of lime zest. Then carefully spray the espuma into the glass and finish by sprinkling a few more crumbles on top as garnish.
Finally, drizzle a few more drops of lime juice on top – then simply enjoy!
