Preparation:
Blend all the ingredients until smooth using a hand blender or a blender.
Strain the mixture through a funnel and sieve into a 0.5 L Whipper. Charge with one Whipper charger and shake vigorously about 12–14 times.
Refrigerate the Whipper for at least two hours and shake vigorously again before use.
The goat’s cheese espuma combines the delicate tang of fresh goat’s cheese with an airy, creamy texture. The mild acidity of the sour cream adds freshness, making it a versatile accompaniment to savoury dishes. Whether served on a burger, with roasted vegetables or as an appetiser, you can create different flavour combinations with fruit, crunchy sides and fresh herbs.
As a topping for burgers and sandwiches
On a beef burger, the goat’s cheese espuma complements the rich, seared flavours. Pair it with caramelised onions, rocket or a little fig mustard. You can also use it to enhance a vegetarian burger with a grilled portobello mushroom or a lentil patty. Add the espuma just before serving to make the most of its airy texture.
With vegetables and potatoes
Roasted beetroot, carrots or sweet potatoes bring a natural sweetness that pairs well with the tangy goat’s cheese. The espuma also complements grilled courgettes, aubergines or green asparagus. Served on a baked potato or alongside crispy potato wedges, it adds a creamy contrast.
With fruity accompaniments
Fresh figs, pear slices or grilled peaches complement the espuma’s slightly tangy notes. For a small starter, try serving it with pear, lamb’s lettuce and toasted walnuts. A little honey or a few drops of balsamic vinegar round off the combination without overpowering the goat’s cheese.
For appetisers and dipping
Serve the goat’s cheese espuma with crusty baguette, breadsticks or crackers. On toasted bread, pair it with a little fig chutney or sun-dried tomatoes. Crunchy cucumber sticks, radishes and strips of sweet pepper also make good accompaniments.
Herbs and crunchy toppings
Chives, thyme or a little rosemary bring out the savoury character of the goat’s cheese. Toasted walnuts, hazelnuts or pumpkin seeds add extra crunch. Sprinkle them over just before serving so they stay crisp and provide a pleasing contrast to the airy foam.
