Slice the cucumbers thinly, finely chop the onion, and place both in a bowl.
Whisk the vinegar, oil, salt, and pepper together, pour over the cucumbers, add the herbs, and mix everything well. Leave to marinate briefly
To make the espuma, mix the cream with the lemon juice, horseradish, and salt, then strain the mixture through a funnel and sieve into a 0.5L Whipper. Charge the Whipper with one Whipper charger and shake vigorously about ten to twelve times. Chill in the refrigerator for a few hours.
To serve, arrange the cucumber salad on a plate or in a bowl and top it with the airy horseradish espuma just before serving.
