Preparation:

Soak the gelatine in cold water, then squeeze it out thoroughly. Dissolve it completely in the gently warmed burrata water.

Blend all the ingredients until smooth using a hand blender or countertop blender, then season with salt and pepper to taste.

Pass the mixture through a funnel and sieve into a 0.5-litre Whipper. Pressurise the Whipper with a Whipper charger and shake vigorously about 12–14 times. Refrigerate for at least two hours before using the burrata espuma, then shake again briefly before serving.


The burrata espuma combines the mild flavour of burrata with the creaminess of mascarpone and crème fraîche.
