BREAD FROM THE DUO POT

Ingredients
For the bread400 g wholemeal flour
100 g wheat flour
1 teaspoon salt
1 pinch sugar
21 g yeast
1 tablespoon vegetable oil
350 ml warm water

Preparation
Mix the wholemeal flour, wheat flour, salt and sugar well in a bowl.
Dissolve the yeast in lukewarm water and add to the flour mixture.
Add the oil and warm water, mix the dough well and shape into a round loaf.
Cover the dough with a damp cloth and leave to rise in the fridge for approx. 12 hours (preferably overnight).
Remove the dough from the refrigerator and knead into a smooth dough. Place the dough on a baking tray dusted with flour. Cut into the dough, place in a cast iron pot (e.g. Kisag Duo pot) with the baking paper and bake in a preheated oven (top and bottom heat) at 230°C for 40 minutes.
