For the vanille espuma0.2 l cream
0.2 l milk
15 g cornstarch
1 piece vanilla bean
1 egg
50 g sugar
1 pinch salt
1 piece lemon zest
1 piece orange zest
For the crumbles100 g butter (soft)
150 g white flour
75 g sugar
50 g pumpkin seeds (chopped)
1 pinch salt

Preparation
Place all ingredients in a saucepan and heat slowly, stirring constantly.
When the mixture thickens, immediately pass through a sieve and pour into a 0.5-liter Kisag Whipper (e.g. Whipper CREATIVE). Add a capsule, shake vigorously about 8-10 times, and chill for about 1 hour.
Mix all ingredients together and spread onto a baking tray lined with baking paper. Bake in the oven at 180°C (fan oven) for 8-9 minutes.
