Preparation:

Fill the iSi Soda Maker Classic or Stainless Steel with cold water, screw on one iSi Soda Charger, and shake vigorously.

Add the remaining ingredients, except for the Martini Rubino, into a shaker with ice and shake vigorously. To serve, pour the cocktail into a large, balloon-shaped glass and top it up with fresh soda water from the iSi Soda Maker. Finally, slowly pour the Martini Rubino over the top and garnish with a sprig of sage.

The "Girls Club" peach cocktail features a lively interplay of fruity sweetness, subtle herbal notes, and a crisp, effervescent finish. To elevate the drinking experience, the food pairings should either mirror the stone fruit profiles or introduce a savory, structural contrast.

Savory Pairings and Finger Food
Salty, cured meats and rich, creamy cheeses provide a stabilizing counterpoint to the sweetness of the peach purée and liqueur. An antipasti platter featuring thinly sliced Parma or San Daniele ham creates a classic sweet-and-savory dynamic. For cheese pairings, mild and creamy options like burrata or fresh goat cheese - drizzled with olive oil and served on toasted crostini—soften the bittersweet undertones of the red vermouth. Warm crostini topped with melted gorgonzola and walnuts will also ground the vibrant botanicals of the gin.

Light Dishes and Salads
If you want to serve the cocktail alongside a light meal, fresh summer salads are a great option. An arugula salad with grilled peach and goat cheese directly mirrors the drink's main component. A simple vinaigrette made with white balsamic vinegar is recommended for the dressing to reflect the acidity of the orange juice in the cocktail. Asian-inspired dishes, such as summer rolls with shrimp, mint, and a mild peanut dipping sauce, also harmonize with the floral and crisp characteristics of the gin.

Sweet Accompaniments and Desserts
Desserts paired with this cocktail should remain light and refreshing, ensuring they do not compete with the sweetness of the drink. A tart lemon or raspberry sorbet provides a crisp, palate-cleansing contrast that enhances the fruit notes. Alternatively, a traditional panna cotta topped with a passion fruit or red berry coulis balances the beverage well, as the rich, velvety texture of the cream offsets the lively effervescence of the soda.
