Preparation:

Pour 250 ml of boiling water over the cacao nibs and cocoa powder and leave to infuse for ten minutes. Then add 750 ml of cold water and refrigerate for at least twelve hours. Finally, strain through a coffee filter or kitchen paper.

Pour the cold brew cacao and the remaining ingredients into an iSi Nitro, pressurise it with an iSi Nitro charger and shake vigorously about eight times.
