Preparation:

For the simple syrup, combine the sugar and water, bring to a boil, and set aside.

For the mint foam, combine all the ingredients and blend using a countertop or immersion blender until smooth and homogeneous.

Caution: Make sure the mixture is completely cold before adding the egg whites!

Next, strain the mixture through a funnel and sieve into a 0.5 L Whipper, charge with one Whipper charger, and shake vigorously about 8 to 10 times. Chill the Whipper in the refrigerator.

For the cocktail, add 1 ice cube, Mezcal, agave nectar, sparkling water, and lemon juice into a cocktail shaker and shake vigorously. Strain through a sieve into a glass and garnish with the mint foam.
