Preparation
Mix the sugar, baking powder, salt, and flour in a large bowl.
Whisk together the yogurt, oil, eggs, lemon zest, and milk. Briefly mix in the flour mixture using a hand mixer (or a whisk). Carefully fold in the frozen raspberries with a spatul
Line a muffin tin with liners. Fill evenly with the batter and bake in a preheated oven at 150 °C fan for about half an hour until golden brown. Remove the finished muffins and let them cool completely.
Color the marzipan paste with a little cocoa and cut into 24 equal pieces. Shape these into sheep's ears.
Decorate the chocolate eggs with 2 ears each using white and brown sugar to create sheep heads. Then, beat the powdered sugar with the butter until white and creamy, and briefly stir in the cream cheese.
Smooth 1 tablespoon of cream cheese frosting in a large ice cream scoop and place half a sphere onto each muffin. Lightly coat the edges of the sphere and decorate with marshmallows and a sheep's head.
Due to their playful appearance and fresh, fruity flavor, these sheep muffins are particularly well-suited for the following occasions:
The Classic Easter Brunch
They are the absolute highlight of any Easter table. Placed between savory egg dishes and braided bread, they provide a sweet visual accent that serves as a great conversation starter for guests of all ages.
Springtime Coffee Break
When the first rays of sunshine appear, the combination of zesty lemon, yogurt, and raspberries pairs perfectly with a cup of coffee or fresh tea in the garden.
Children's Birthday Parties
Sheep are always a hit! The marshmallow look is a huge favorite with kids. Plus, the muffin format makes them clean and easy to portion – ideal for small hands.
A Gift for the Host
Instead of the classic box of chocolates or flowers, a "little flock" is a creative gift that shows you really put effort into your baking.
Baking Event with Friends
Since decorating with marshmallows and sheep heads takes a bit of time, this recipe is wonderful for a shared baking afternoon where you can get creative together.
