100 g cherries, pitted
200 ml cream
2 ladyfingers

Preparation:
Mix the sugar and lemon juice thoroughly in a bowl. Press the cherries through a sieve, add the juice to the sugar and lemon mixture, and blend in the cream.
Pass the mixture through a funnel and sieve into a 0.5-liter whipper, charge the whipper with a charger, and shake vigorously about 10 to 12 times. Crumble the ladyfingers into a glass and top with the cherry espuma.
