Preparation:

Mix the sugar and lemon juice thoroughly in a bowl. Press the cherries through a sieve, add the juice to the sugar and lemon mixture, and blend in the cream.

Pass the mixture through a funnel and sieve into a 0.5-liter whipper, charge the whipper with a charger, and shake vigorously about 10 to 12 times. Crumble the ladyfingers into a glass and top with the cherry espuma.

We have put together a selection of additions that pair wonderfully with the fruity cherry espuma on ladyfingers:

Fruity and Aromatic Additions
To emphasize the natural sweetness of the cherries even more or to contrast them with an exciting note, fresh herbs and additional berries are ideal. A fine carpaccio of fresh cherries or a few halved cherries marinated in Amaretto enhance the deep fruit notes. A few leaves of fresh mint, basil, or lemon thyme bring a herbal freshness to the dish, while pickled sour cherries provide a pleasantly tart contrast.

Matching Ice Cream Creations
A cold element rounds off the airy texture of the espuma and makes for an exciting mouthfeel. A creamy quark or sour cream ice cream picks up the subtle acidity of the lemon beautifully. If you prefer a more fruit-forward option, choose a refreshing lemon or dark berry sorbet. For a classic, elegant dessert experience, a fine pistachio ice cream works wonderfully, as its nutty flavor harmonizes perfectly with the cherry.

Beverage Recommendations
The delicate lemon note and velvety cream call for a balanced beverage pairing. A fresh, slightly chilled Darjeeling tea or cold infused water with lemon and rosemary highlight the lightness of the espuma. If you are looking for an alcoholic pairing, a well-chilled cherry liqueur, a fruity rosé champagne, or a sparkling Moscato d’Asti is an excellent choice, as the fine effervescence refreshingly cuts through the rich cream.

Garnish and Texture
The crunch of the crumbled ladyfingers forms the foundation of the dessert and can be further enhanced in both appearance and taste. Lightly toasted sliced almonds or chopped pistachios add pops of color and extra crunch. A few shavings of dark chocolate (at least 70% cocoa) bring a sophisticated, slightly bitter note that pairs exceptionally well with cherries, giving the layered glass presentation an elegant finish.
